I'm an undissertated doctor in physics.

I've never heard anyone use this phrase. It does make me wonder. The usual phrase is ABD - "all but dissertation". There is even a degree awarded by some schools - MPhil, standing for Masters of Philosophy.

arrete - "undissertated in economics"
