In lieu of kielbasa I sometimes sprinkle baco's in the potatoes (I know, Christina, you hate baco's, but they add a smoky flavor). Mushrooms are another good add-in.

As far as baco's go, I just prefer the ones made from real meat.

I occasionally put mushrooms in the kraut.

Now I'm craving pieorgies.... sauerkraut pierogies, cabbage pierogies, potato and cheese pierogies...all sauteed in butter and onions....
Easy to make....
