I saw this cookbook on the Today Show this morning & the recipes sounded very yummy:

How to Cook Everything Vegetarian: Simple Meatless Recipes for Great Food

One of the recipes they highlighted was an African dish called Peanut Soup - with tomatoes, kale, sweet potatoes, red onions, garlic, ginger & yes, a bit of peanuts & a small dollop of peanut butter for a flavor accent. It looked & sounded absolutely delicious.

Thy also showed Baked Apples with Blue Cheese Filling - halved apples baked with butter & apple juice. Cook cut-side down until half-cooked. Flip over, fill the hollowed-out cores with a dollop of blue cheese, a bit of sage leaf, salt & pepper to taste. Return to the oven to cook to finish. Yum! A new twist on an old winter standby.

The Amazon reviews looked good, as did one of the highlighted recipes on the Amazon page - "Crunchy Corn Guacamole", with several variations included as well, in case you have other ingredients on hand.
