There have been efforts to 'produce' cats that don't express this protein (hypoallergenic), including claims by one probably fraudulent company (Lifestyle Pets), but so far there are no verified allergy free breeds.

But ... if you are in the biotech mode. You can make glow in the dark bunnies. Some years ago was (quite controversially) engineered to express green fluorescent protein, commonly found in jellyfish.
