marinate in high-quality soy sauce (I like Ohsawa tamari), sesame oil, grated ginger, and a splash of mirin or sake. Remove from marinade, then grill.

I’ll try this on cod. It’s the most easily available fish here. Nice texture but the taste is too bland. The fillets are quite thick. I never know how to add some flavor to it.
