Legumes Like beef, beans and peas are good sources of immune-boosting iron and zinc, but they're also loaded with vitamin B6, which helps create infection-fighting white blood cells called lymphocytes. We ate burritos over at Vangie's house this evening. She made pinto beans the other night and they never got tender so I took them home and put them in the Vita-mix and kept pushing them down into the blades and it finally made the pinto beans nice and mushy so we could put them on burritos. I also made Spanish Rice and we had shredded cheddar cheese, sour cream, onions, tomatoes, shredded lettuce, black olives, salsa, chips, etc. Vangie made a pumpkin pie for dessert but I was too full so she sent me home with a piece for tomorrow. I'll probably eat it for breakfast. Art |
