My wife's family are "Irish" (Scots-Irish) on her father's side. I cooked baked potatoes and cooked steamed cabbage for my wife since she's a vegetarian; that's about the only Irish food I know how to cook. I also fried chicken for myself. I opened a can of pinto beans for my wife since she doesn't eat meat.

If her family did any Irish cooking when she was a kid, I suggest you do her up a soda bread. My wife loves her soda bread, she says it is like reliving her childhood, it is quite easy too, just raisins, flour, sugar, butter milk(or soured milk), baking soda, baking powder and some raisins -- no big production with yeast and rising etc -- James Beard had a nice simple recipe, I just add a little extra sugar because I know she likes it a little sweet(like her men<grin>)
