Oh, one more thing: if I have to, can I make it without mussels? I may not be able to find them around here this time of year.

Absolutely! Think of paella like you would think of lasagna: It's a creation - not a recipe! Since I'm allergic to mono-valves and bi-valves (abalone, clams, mussels, oysters, etc.), I always substitute those things with crustaceans: shrimp, lobster, crab, etc.

One classic interpretation of the name "Paella" is that it derives from "Pa' ella" or "Para ella" which means "for her". If you want to make it special for some male friend, you could call it "Pael". If you want to make it special for yourself, you could call it "Pamí"

Better yet, if you are making it for a group, you can make all the changes you like and call it "paellos"
