One of the things DW's diet has her using is avocado oil - which is suitable for doing some
high-temperature frying.

With a smoke point of 520 degrees F, avocado oil would be great for high temperature frying, except for a cost of around $45 or $44 a gallon. At around $35/gallon, grapeseed oil, with a smoke point of around 485 degrees F, would also be a good choice for high temperature frying. Many restaurants and locals use peanut oil for its smoke point and moderate cost for deep frying.

See for the smoke points of assorted oils.
