This is a guy who is a “bread historian” (no really, he’s written several books about it). In this video he gives the history of restaurants in Paris beginning in the 13th century. Fascinating what you can find fascinating I guess: it combines my love of history with FOOD. Anyway, I worked with him 50 years ago in Cambridge, Mass, and just found this talk he gave back in February. (He starts at about 1:15 in, following a dreadful introduction by the librarian.)
