I'm having a party over Memorial Day weekend, and I thought I'd like to serve a paella as a change from the usual dogs & burgers fare (I almost always make one nice big hot dish in case the weather precludes the use of the grill).

The only problem is that I can't find a decent recipe. My Joy of Cooking must be the most complicated cookbook I've ever owned; that one practically starts with "first, harvest the mussels". Does anyone have a reasonably simple recipe for this?

Oh, one more thing: if I have to, can I make it without mussels? I may not be able to find them around here this time of year.
