I grew up using the spice labelled "paprika" at the grocery where it is used more to add color than flavor to a food. Everyone seems to sprinkle some on deviled eggs.I traveled to Budapest last year. That's where I got to encounter Hungarian paprika. I brought home two bags of it, édesnemes or sweet paprika, and eros or hot paprika. I have not used much of the sweet paprika but I just love the hot paprika. I find myself substituting it for other hot spices like cayenne in recipes. Recently, I made some bean soup with it and also added it to my jerky recipe. I'll be sad when it is all gone.PSU
amazon is your friend...seems to offer many choices in hot Hungarian paprika including surprisingly one from mccormick!Teri ..cannot tolerate cayenne but may give paprika a try!!

“Pride of SZEGED” brandThis was also recommended to me by a friend married to a French-Hungarian-American. I've used it for Hungarian Goulash and Chicken Paprikash. [And I'm so glad this came up, I'll make one of them again soon!]I've never bought Hungarian hot paprika, but I'm starting to drool at the thought ;-)I use a delicious cayenne from India in South Asian dishes, red pepper flakes for Italian, Sriracha or sliced serrano for Southeast Asian, and Shichimi Togarashi for Japanese (blend of chllies, sesame seeds, poppy seeds, orange peel, ginger, and nori).
CHCKEN PAPRIKASH(1) Dry and salt 6-8 skin-on chicken thighs (or breasts or mixed parts). Sear skin-side down in 1/4 cup organic ghee, then sear the other side. While it's cooking, thinly slice 4 medium-large onions and 3 red bell peppers.(2) Remove the chicken to a bowl and saute' the onions in the chicken fat & ghee for 5-10 minutes, stirring a few times. Add bell peppers and a bunch of pressed garlic.(3) Stir in 1/4 cup sweet paprika and ~3/4 teaspoon cayenne and cook a few minutes, then add a cup or so of good chicken bone broth.(4) tuck in the chicken and simmer 10-15 minutes, turning the chicken halfway through.(4) When done, stir in 1 cup organic full-fat sour cream and serve over cauliflower rice w/steamed green beans on the side.So easy, saucy, and yummy!
