Just kiddin'!!! I actually had a really nice supper. I braised some boneless, skinless chicken thighs (can't believe how cheap they are here in Indiana vs California) braised in chicken stock for 30-45 min. Served with braised baby spinach leaves and mashed potatoes and oat flour gravy (made from the pan drippings from braising the chicken after most of the liquid had boiled off, of course!).

Braising the chicky thighs in good, homemade chicken stock is magic. MAGIC, I tell ya!!! Try it! You won't believe how silky, smooth, melt-in-your-mouth tender they come out! And, don't forget to smother them with some of the gravy when serving.

Yum, yum, yum!
