Per the middle of p 12 of the owner's manual, it does remember settings.

Yes, that is what it said. It also says The setting stored in memory will be lost if the power plug is removed. I find it amusing that the last instruction on the page is to unplug it! 8-)

I never unplug it, but I do hit the power button to turn it off after I am done. When I tested the toast setting it reverted when I hit the power button, the instructions not withstanding. However it is possible that more recent versions act differently.

And really, the up/down scale is pretty easy to fiddle with if the center setting is not what you want. For rye bread I like the default center setting. For English muffins I also use the center setting, but twice, turning them between.
