I remember reading books/novels about Jewish meat markets in New York City that during certain times of the year keep barrels of curing brine with pickling spices in the cooler in the back of the store and they'll let you pick out a piece of beef and then they'll put it in a muslim sack or net and put it down in the brine with your name on it and you can come back like in a week and pick it up for the Sabbath or whatever Jewish holidays that it's traditional to serve brisket.

Sounds like a fun cool thing to do? My idea of a good time.
