No opinion on the stock, but what recipes were you looking at? This is the one that led me to discover the site (via a google search)--looks pretty healthy to me--no 'salt & udder stuff' (and if you're highly concerned with sodium, you could use low-sodium canned beans--or prepared dried beans):

Fiesta Rice Salad

Ingredients

2 cups brown rice, cooked and hot
1 tablespoon olive oil
1 cup corn kernels, fresh or frozen
1 can black bean, rinsed and drained
2 limes, juiced
2 tablespoons olive oil
pinch salt and pepper
1 red or yellow bell pepper, seeded and diced
1 cup cherry tomatoes, halved
1 jalapeno pepper, seeded and minced
1/2 cup red onion, diced
1/4 cup cilantro, chopped

No opinion on the stock, but what recipes were you looking at?

Axe-u-lee I just clicked on the Chicken Taco Soup and the Chicken Noodle Soup recipes and figured that it was like those recipes in “The Midwest Church Cookbook” that start “open 2 cans of Cream of . . . . Soup”. I was interested in the taco soup because I had just made a pot for DW using chicken & stock from I bird that I roasted the middle of last week. I didn’t have any canned black beans but I did have frozen corn, frozen tomatoes & green chilies from the garden, fresh cilantro growing in the herb bed, etc.
