Ricotta with cream, Splenda, and cocoa powder

Hey Beth:

This is one of my favorite desserts or snacks.

I also use a splash of heavy cream and sometimes add Atkins hazelnut syrup. Do you whip it up so that it's like pudding or mousse? That's my favorite way to eat it.

Good to see the ricotta fan club is still going strong!

Two of my favorite variations are:

Berry: defrost some frozen mixed berries, add sweetener. I use the powdered stuff for this one or it gets too liquidy by adding cream.

Peanut butter: PB and cream, sweetener, or PB and nut based SF syrup.

PBcup: Same as above using cocoa powder too.

Cinnamon: cream, cinnamon, sweetener

My 8 year old loves the peanut butter one, though I use honey for his sweetener. My 5 year old loves the cinnamon, for which I use sugar. I figure getting them off the toast in the morning is a good first step.
