Saute diced onion, bell pepper, and celery for a few minutes, then stir in freshly minced garlic, a little optional white wine, chicken broth, diced tomatoes, a few sprigs of fresh thyme (or dried thyme or herbes de provence), a bay leaf or 2, and salt & cayenne. When cooked to your satisfaction, stir in raw shelled shrimp, turn off the heat, and stir occasionally--it'll be done in a few minutes and shrimp very tender. Serve--over cauli-rice if you like--sprinkled with chopped scallion and parsley. With an optional glass of wine.
