Since you both have basically very clean healthy credit from your description, this is easy and there's no reason NOT to do what you're wanting to do. You can write letters to the cards you plan to keep, requesting to be added as a co-applicant to the spouse's account. You'll need to both sign both letters, otherwise, it may not be clear to the card company that both of you are in agreement, and you may wish to include a copy of your marriage certificate, especially if you retain different last names. Then there's no need to open yet another account to get both names on one account.

In actuality, it's harder to get your name OFF an account for which you're already jointly responsible, 'specially if there's a big balance and the cardholders are in financial trouble. The CC companies are only too thrilled to add more names to an account as responsible parties for payment.
