So my real question, and you may have answered it, is how do you handle it when you isolate against a player who will play this way? Do you shut down against a scary board and just check call, or do you play more aggressively because of your read?

In this case, you have a specific read so I wonder why you asked us? You were using your best judgement and why would you think our judgement is better?

When I play against players like this, I *occasionally raise* them but mostly just call them down. If I don't know the player, I will usually believe them and fold when they show aggression back to my aggression when I have second pair or lower.
