Stashed a zip loc of last week's shredded butt in the freezer.
Pulled it out today....

Sauteed some onions and garlic in peanut oil, added a few heads of bok choy/green onions/fresh chopped ginger..... when it's wilted, add the pork and souse it with garlic chili paste/vinegar... when that's hot, pour on a cup of water/soy/rice wine/corn starch. Couple minutes to get glossy and serve over rice.

Lots of vegetable and some great shreddded BBQ pork.
