For my Iceland trip, I was a little concerned about the whole chip & pin thing. As it turned out, that has somewhat gone by the wayside - at least for the things I did(I did not rent a car or buy gas). I ended up waiting to get any cash to see if I would need it(I have a Schwab checking account for this if needed). I used a Chase Sapphire Reserve for everything with tap to pay and no issues.

I still have leftover cash from a few places that I will take along on trips where it might be used but I am hoping I might be done with it.

There was no additional fee for credit cards in Iceland. The last time I was in New Zealand at the beginning of Feb 2020, there was a small fee there.
