thanks for the reply--after posting my OP, I bought a wedge of parmesan at the grocery store and dug out my graters suitable for cheese--I have a board-like one (not a box, but like one side of the box) as well as a rotary one. I froze the cheese a few hrs and used both graters. The board one worked well for the initial shredding/grating and the rotary worked marvelously for the end that remained. I may just cut the cheese up next time and use the rotary grater--it was kinda fun actually....

I now have a rubbermaid container of hand-shredded parmesan in the freezer to use as needed. Not sure what to do with the can I bought--maybe popcorn--or on hot macaroni.

btw--I think shredding it yourself is less costly than paying for 'them' to shred and package it....
