The meat was tender and we liked it like this, although I admit that chuck isn't the tastiest cut of beef, which IMO would be ribeye, skirt, prime rib. Which is why I use chuck for things like stew or soup. Probably better to braise slowly (which I usually do for pot roast), but the IP is efficient and easier to clean.
