Tofu, Shiitake and Kale Bowl
?4 servings

2 C cooked rice? (brown, wild, medley, whatever)

1 T oil (coconut, olive, whatever)
?1 medium onion, chopped
?2 garlic cloves, minced
?2 T soy sauce
?½ t wasabi paste
?½ t red pepper flakes
1 C sliced shiitake mushrooms
?½ -1 block tofu (firm or whatever), cubed?
1 bunch chopped kale (about 4 C)--for very tender kale, chop finely
?1 T sesame seeds, toasted

(1) Saute' onion for a few minutes. Add garlic, saute' a minute
(2) Stir together soy sauce & wasabi, add with red-pepper flakes and cook another minute.
(3) Stir in mushrooms, saute' a few minutes.
(4) Add 1/3 cup water and the kale. Cook until kale is about done to your preference, anywhere from 5 minutes for crisp to 10 minutes for tender.
(5) Stir in tofu to heat through.
(6) Top ½ cup cooked rice with 1½ cups veggie mixture and sprinkle with toasted sesame seeds.
