Two of the low-carb crackers that I particularly enjoy for both flavor and texture are the following.

Healing Home Foods makes several crackers, and my absolute favorite is the Kale Goji cracker. The ingredients are: Almond flour, *sprouted almonds, *dried goji berries, *ground flaxseed, gluten-free oat flour, *kale, nutritional yeast, *extra virgin olive oil, Himalayan crystal salt, *basil, *rosemary. (The asterisked ingredients are organic.) One serving is 130 calories, 7 g of carbs, and 5 g of protein

The other brand is Fat Snax! (The ! is part of the name.) I like the Everything version. The ingredients are: Almond floure, egg white, butter, cream cheese, coconut flour, flaxseeds, water, sea salt, xanthan gum, aluminum-free baking powder, garlic, onion, sesame seeds, poppy seeds, rosemary. One serving (17 crackers) is 130 calories, 6 g carbs, 5 g protein.
