Two years ago I opened a Roth for myself and separate account for my wife, each a mutual fund.

Now I wish to put this years Roth amount into a different mutual fund that does not appear to be an option.

Do I just open another Roth account with a company that handles that mutual fund?

Can I open another Roth Account and deposit $2,000 into that account each year? Seems to me that I should be able to do this.

You can open a new ROTH at another company. However, you can only put a total of 2,000 per year into all of your ROTH's. Your wife can also put a total of 2000 into all of her IRA's. Can not put 2000 in each ROTH you have.
