ciabatta rolls

olive tapenade (mostly chopped black & green olives, with a little chopped sun-dried tomato, red wine vinegar, garlic, oregano--stirred together. Nice topping for plant burgers, plain cooked veggies, on canapes)

mushrooms (I prefer brown mushrooms for this)

baby spinach (or other leafy green you like raw)

cashew-pepper cream (cashew butter, roasted red pepper, lemon juiice, garlic, salt--blend in food processor. Makes a great sandwich spread. Feel free to add cayenne, smoked paprika, or other strong flavor if you like)

(1) Make tapenade (or open a jar ;-)
(2) Make cashew-pepper cream (maybe you can buy this, I don't know)
(3) Lightly toast the ciabatta halves.
(4) Thinly slice & saute mushrooms in a little olive oil.
(5) Spread bottom side of roll w/tapenade, then mushrooms, finally raw greens.
(6) Spread top of roll w/cashew-pepper cream. Put 'em together :-)

We are not vegan or even vegetarian--and we rarely eat any kind of sandwich, but we love this and had it today for a treat.
