We just whipped up a batch of vegetarian chili. Perfect for cold, winter weather. It's not conscious choice to avoid the meat; it's just that meat wouldn't really add much to it!

My wife cooks it up; I just help with some of the cutting of onions, celery, and peppers. Most of the rest comes from cans of various beans, tomatoes, and corn. When it's done, it is fabulous, and you'd never miss having meat in it. (She likes rice, so adds some cooked rice to hers when served.)
